The first thing you need know about Vietnamese ducks is that they’re meaty and not fatty, yet they’re still succulent and delicious. The base of the broth is more herbal-esque because the duck is stewed with shiitake mushrooms, dried tangerine fruit skin, star anise, whole cloves, and cinnamon. Therefore, you know the soup is going to be robust and savory with many amazing flavor notes. The broth is dark and rich but still light. So when compared to other soups, it’s definitely in a league of it’s own. It’s eaten with fresh egg noodles and Chinese cabbage and, often times, people will add a little bit chili oil/sauce for a kick.
